Small, indulgent, and bursting with Nordic flavors—these Cassis-choko treats are perfect for an elegant dessert table. You can make them either in a roulade or build as petit fours.

Ingredients
- 4 eggs
- 1½ dl sugar
- 2 tsp baking powder
- ½ dl barley starch
- 2 tbsp cocoa powder
- 4-5 tbsp Natural Nordic blackcurrant powder
- 150g dark chocolate (melted)
- 2.5 dl yogurt-cream mixture (for filling and topping)
- 1 tbsp blackcurrant powder (sieved)
- 1 tbsp almond flour (sieved)

Directions
- Preheat the oven to 225°C.
- In a mixing bowl, whisk the eggs and sugar together until light and fluffy.
- Gently fold the sieved dry ingredients into the egg mixture until fully incorporated.
- Spread the dough evenly on a baking tray lined with parchment paper. Bake for 6–8 minutes.
- Remove the cake from the oven, and flip it onto a sugared parchment paper.
- Peel off the baking paper. Let the cake cool completely.
- To make petit fours, cut the wanted shape of the cake - make as many layers as you like.
- Assemble the petit fours. We assembled with two cake layers with filling and topping.
- Mix blackcurrant powder with the melted chocolate for the filling.
- Spread the blackcurrant-chocolate filling evenly over the bottom layer of the cooled cake base. Add yogurt-cream layer before adding an extra layer of base.
- Place another layer of cake on top.
- Spread yogurt-cream over the top layer and dust with mixed and sieved blackcurrant-almond powder for garnish.
- Refrigerate the cake until set. Serve and enjoy.
Recipe Note
Tips: you can also roll the cake tightly to form a log and slice it into petit fours. Decorate as you like.
Tips 2: you can make the treat even healthier by using only yogurt instead of yogurt-cream
